I made myself sit down and come up with a simple plan so we don't end up eating out every night this week, so here it is:&lt;br /&gt;&lt;br /&gt;Monday - Spaghetti&lt;br /&gt;Tuesday - Tacos&lt;br /&gt;Wednesday - Dinner at my parents' house&lt;br /&gt;Thursday - Breakfast for dinner&lt;br /&gt;Friday - Chicken?&lt;br /&gt;Saturday - Unsure&lt;br /&gt;&lt;br /&gt;We will see about Friday and Saturday. (one of my favorites), a bagged salad that I added some green onions and cucumber to, and my mom's recipe for baked macaroni and cheese made by my sister. My sister has moved into our apartment complex and we have been having "community" dinners. Sometimes she makes the main dish and I make the sides, sometimes I make the main dish and she makes the sides, sometimes we make our own dinners and just bring our plates to the other one's apartment and just eat together, etc. We are really enjoying this arrangement and it's fun to get together to share a meal with family almost every night. I used &lt;a href="http://www.bettycrocker.com/recipes/turkey-cornbread-tostadas/0e9483c6-ff72-4e43-a239-30533fbade37"&gt;this Betty Crocker recipe&lt;/a&gt;, but used ground beef instead of turkey because that is what I had on hand. We really enjoy the Good Earth boxed meal. It was easy to put together and a healthier option compared to other boxed meals. The meal contained 100% whole grain pasta and had no artificial colors or preservatives. The sauce was from a jar, but the veggies were fresh and homemade. I sprinkled the veggies with garlic powder and then sauteed them in olive oil for about 5 min over medium high heat. You want the broccoli and peppers to stay crisp and the onion to just start to brown. I can't even remember the events that led up to me walking away from it, but I'm happy to say I'm back. &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;In the past year, I gave up menu planning on my own and tried several different menu planning services. As a family, we couldn't find one we were happy with. We were either spending way too much money at the grocery, or we just didn't care for types the food included in the plan, or the system was too complicated, etc. The biggest deal breaker for us was we felt trapped by our menu plan. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The most important lesson I've learned about menu planning for my family while I was away is that we are very spontaneous. Judebug and I may cruise over to my parents house on a random weekday and more often than not we stay much longer than expected. Pretty soon it's late in the afternoon and either it's too late to cook the meal assigned to that day or my parents end up inviting us to stay for dinner. Or my sister stops by with her boyfriend and suddenly our original meal plan for two and a half isn't going to cut it.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;My dilemma was how do I plan meals for my family, but not miss out on the  time with my extended family. I haven't come up with the perfect system, but it's been working for us. I used garlic and herb pizza dough from Trader Joe's, jarred sweet basil and tomato pasta sauce, and shredded mozzarella. On one half I left just cheese and the other half was a trio of Italian meats (pepperoni, salami, and prosciutto) and red onions. Next time I make a pizza I'm going to try brushing some olive oil on the crust. The chicken was so easy to make and took less than 30 minutes. Here are two dinners from this past week. The first is baked chicken, I just took out some seasonings from my spice cabinet, seasoned both sides, and then baked at 350 for 30 min. I served egg noodles, bread, and carrot sticks on the side. The second meal is meatloaf. I've been working on my meatloaf recipe and I think I am happy with how this one came out. 1 lb ground beef, 1 cup plain bread crumbs, and 1 egg. I also add Worcestershire Sauce, sage, garlic pepper, and parsley flakes. Basically whatever I have on hand in the spice cabinet that sounds good. Combine everything and put in loaf pan. Then I put 1/2 cup of BBQ sauce over the top. Bake at 350 for 45 min. I topped mine with Provolone slices and baked an additional 5 min to melt the cheese. I served bread, orzo, and a salad consisting of romaine, cucumber, bell pepper, shredded carrots and homemade Greek Lemon Dressing. I forgot to take a photo of the Taco Pie. Every mom needs to know how to make Bisquick Pie. The only necessities are ground meat, 1/2 Bisquick, 1 cup milk, and 2 eggs. Brown your ground meat and put in pie plate. Mix milk, eggs, and Bisquick together and pour over ground meat. Bake at 400 for 25 min. This is the basic recipe, you can turn this into whatever you want, by adding other ingredients, putting cheese on top, etc. For taco pie, I add a taco seasoning packet to ground beef and put shredded Mexican cheese on top after it is done baking, then pop it back in the oven to melt the cheese. You could add chopped green chilies to your taco meat, serve with sour cream, lettuce, and tomato on top, etc. The photo here is of the BBQ Chicken. It is simply chicken breasts with BBQ sauce poured over the top and baked. Makes good leftover BBQ chicken sandwiches. My son had a fever most of last week and we found out that he has a double ear infection. Also we went to Disneyland on Monday, which pretty much threw off our whole schedule this week. Anyway, here is my grocery shopping from Vons. My total was $75.18, and my total savings were $82.46! For dinner tonight we had chicken sandwiches and frozen seasoned veg. I just seasoned the chicken breasts with salt and pepper, and then cooked on the stove top with a little bit of olive oil. Tonight I made a very simple dinner, baked pasta. I boil a package of pasta (tonight I chose rigatoni), drain, pour in a casserole dish, pour a jar of pasta sauce on top (I used&lt;a href="http://www.classico.com/flavors/product_details.aspx?pid=23"&gt; roasted garlic tomato pasta sauce&lt;/a&gt;), bake 20-30 min at 325. You could put cheese on top, or mix ricotta in with the pasta for a lasagna effect. We were planning on having this dinner with my mother- and father-in-law (it is also his birthday), but the little one had a fever this afternoon when he got up from his nap, so we stayed in tonight. This is one of our favorite Mexican restaurants. There are so many options! Traditional Mexican, vegetarian, and vegan options.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Saturday night: My parents took us out to B-B-Q Smokin' Sam's in Chula Vista. Pretty good BBQ place. Good chicken and brisket. The sweet potato fries were awesome.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Tonight: My husband made dinner for me! My little one needed some mommy time (AKA an extra long nursing session) so hubby stepped up. I got an awesome free sample of Fiber One pancake mix at Vons today. The package made about 10 pancakes! So he made those, kielbasa, and eggs. It was very yummy.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Here is my grocery shopping today from Vons. My total was $80.82. I forgot to put the case of water on the table for the picture, but I got that for free. We had a well baby check up late yesterday afternoon and my sister came over to check out our new Wii, so I needed a quick and easy dinner. Tonight I actually made Sunday's dinner, meatloaf, because I realized the sell by date on my ground beef was tomorrow. I don't have a specific recipe for my meatloaf, I just use what we have and eyeball all the measurements. Tonight's meatloaf was: 1 lb ground beef, plain bread crumbs, 1 egg, worcestershire sauce, minced garlic, S &amp;amp; P, sage, and parsley flakes. When it is almost done baking I sprinkle shredded cheese on top, again whatever we have on hand. Tonight was sharp cheddar. This is one of our favorite meals. I always make a big batch of pancakes for we can eat the leftovers in the morning during the week. I also baked some oatmeal chocolate chip cookies from a Betty Crocker mix. I did some grocery shopping at Vons today. We were so hungry and it looked so good! On Fridays, we like to eat out and try someplace new. We had to get take-out since the little one is sick and I didn't want to take him out or leave him with Grams. We tried Zia Gourmet Pizza in Normal Heights. We love supporting local businesses and this is a truly unique pizza place. I had a slice of the Cheesy and the Potato. The Cheesy has cream cheese, feta and mozzarella with basil. The Potato has rosemary potatoes, garlic, feta, cream cheese, and mozzarella. Wesley tried the Carnivore (turkey pastrami, garlic, feta, mushrooms, walnuts, cream cheese, and mozzarella) and the Sweet Southern French (chicken, feta, caramelized pears, walnuts, and mozzarella). Added bonus: they sell Mexican Cokes! This is how I make spaghetti:&lt;div&gt;&lt;ol&gt;&lt;li&gt;Brown ground beef&lt;/li&gt;&lt;li&gt;Add canned tomatoes&lt;/li&gt;&lt;li&gt;Simmer while making the rest of dinner&lt;/li&gt;&lt;/ol&gt;What kind of canned tomatoes you use depends on how you like your sauce. I like a very thin sauce, so I use 2 14.5 oz cans of seasoned diced tomatoes with 1 lb ground beef. My husband likes a saucier sauce, so sometimes I'll just use one can of the diced and a can of tomato sauce or paste. Buying seasoned tomatoes is also helpful because I don't have to add anything else. I like to use &lt;a href="http://www.hunts.com/product_detail.jsp?product=diced_bas_gar_oreg"&gt;Hunt's&lt;/a&gt; or &lt;a href="http://www.delmonte.com/solutions/featuredproduct.aspx?id=530"&gt;Del Monte&lt;/a&gt;. We tried a new &lt;a href="http://ronzonismarttaste.newworldpasta.com/pasta_products.cfm?prodId=10071300050016&amp;amp;navCatId=2"&gt;pasta&lt;/a&gt; tonight. It is semolina pasta, but has added fiber and calcium. We try to eat whole wheat pasta, but I still prefer the semolina kind. I just coated the chicken in Italian bread crumbs and baked for 30 min at 350º. I really love the bag of frozen biscuits, especially is you are just cooking for one or two people. The only foods that we always buy organic are milk, meat, eggs, and anything my baby eats. This week I spent $86.65. To the left is from Vons, totaling $54.02. On the right is from Whole Foods totaling $32.63. The deli package is organic chicken breast from a local farm. My mom usually makes holiday dinners for the whole family, but my parents and sister were in Germany this Easter. I made &lt;a href="http://www.bettycrocker.com/recipes/recipe.aspx?recipeID=32358"&gt;Chicken Cordon Bleu Casserole&lt;/a&gt;, a salad with honey french dressing, peas with almonds and bacon, and garlic cheese biscuits. For dessert, I baked two different cakes, spice and chocolate, both in fluted pans. Then I mixed fresh strawberries and raspberries with a can of blueberry pie filling. Put some of the fruit mixture on a slice of cake and topped with whipped cream. Simple and delicious. I was hoping to take more pictures, but the batteries ran out in the camera.&lt;div&gt;On a side note, I found out I have mastitis. Bed rest is recommended so I will not be making dinner until I am feeling better. My family consists of my husband and our 8 month old son, "my boys." We also have a cat named Winston, and a dog named Henry.
